Breakfast on the go to get you started
In recent years, taking or buying the first and most important meal of the day has become a real trend. This ‘to-go’ trend can be divided into two types:
On the one hand, you can buy your breakfast at the supermarket or bakery, for example, and then eat it on the go or at work. While this is easy and convenient, it clearly has one huge disadvantage: the large amounts of waste produced by disposable coffee cups and food packaging.
Or you can simply prepare your favourite breakfast at home and pack it to enjoy on the go, at school, university or in the office. At first glance, a homemade breakfast to go seems very time-consuming – but it's not! It's actually a real problem solver: Simple. If you're not hungry in the morning, you can enjoy your healthy breakfast on the go, whenever and wherever you want.
Time-saving. Those of you who like to sleep in and then don't have enough time to eat breakfast at home can prepare your breakfast the night before and simply eat it on the go. You can find two suitable overnight oats recipes to prepare the night before here.
Practical. You can use an old jam jar, a preserving jar or a Mason jar for your prepared breakfast. Not only does your breakfast look nice in it, but it's also well protected from annoying leaks. You can find more inspiration for containers for your breakfast on the go here.
Environmentally friendly. By using reusable containers for your breakfast on the go, you can easily avoid the large amount of packaging waste from the bakery or supermarket and do something good for the environment at the same time.

Recipe: Good morning muffins
Course: Breakfast
Ingredients
- 150 g Verival coconut and apricot porridge
- 2 large eggs
- 150 ml natural yoghurt or plant-based alternative
- 50 ml vegetable oil
- 100 g apple sauce
- 4 tbsp honey
- 150 g wholemeal spelt flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
Preparation
- Preheat the oven to 150 °C.
- Mix the Verival coconut and apricot porridge, wholemeal spelt flour, baking powder, baking soda and cinnamon in a mixing bowl.
- In a second bowl, mix the eggs, natural yoghurt, vegetable oil, apple sauce and honey.
- Combine the dry ingredients with the wet ingredients.
- Do not stir the batter too much, just until all the ingredients are moist.
- Line a muffin tin with muffin cups and carefully fill them about ¾ full with the batter using a spoon.
- Bake the muffins in the oven for 20-25 minutes.
- Allow to cool and enjoy!

At school, university or work, it is necessary to stay focused and productive for long periods of time.
